Our current rotation follows a small set of producers through the year. This month: washed Caturra from San Marcos, natural Heirloom from Guji, and a honey-process Pacamara from Santa Ana.

Guatemala / washed / filter
Cocoa nib, baked plum, and a soft orange finish. Brew at 94°C.
Ethiopia / natural / omni
Blueberry skin, jasmine, and a long black-tea finish. Brew at 92°C.
El Salvador / honey / espresso
Meyer lemon, panela, and toasted almond. Pull a 1:2 ratio in 29 seconds.

The roastery counter is open for espresso, filter, and bags to take home. If the blue door is open, the batch is cooling.
