01 / The house

A room for the unhurried.

We keep the welcome small and the table long. Cantilever is a working estate shaped around the pleasure of staying awhile.

“The first glass is for arriving. The second is for noticing where you are.”

Morning begins with bread from the village oven. Afternoons are for the shade of the pergola, or the path down to the olive grove.

Our small cellar follows the seasons rather than trends. Every pour is served where it was made, with something warm from the kitchen.

Dinner is a kind of landscape.

Chef Marta Bellini cooks in the register of the land: spare, generous, and a little changed each evening. The menu is set at dusk. Tell us what you cannot eat; leave the rest to the season.
